Goat’s cheese & broccoli frittata

Ingredients

  • 6 eggs
  • ½ head broccoli florets
  • 60 gm soft goats cheese
  • 1 sprig tarragon chopped
  • 1 sprig parsley chopped
  • black pepper seasoning
  • 1 medium green chilli chopped
  • 1 clove garlic chopped

Instructions

  1. Beat eggs, freshly chopped tarragon, parsley & seasoning in a bowl.

  2. Heat broccoli florets, green chilli & garlic in frying pan until softened

  3. Crumble goat’s cheese and mix then add egg mix and heat until base browned

  4. Flip frittata and cook on reverse side for further 5 to 6 minutes, until cooked through.

  5. Divide and serve with fresh salad.
