Goat’s cheese & broccoli frittata
- 6 eggs
- ½ head broccoli florets
- 60 gm soft goats cheese
- 1 sprig tarragon chopped
- 1 sprig parsley chopped
- black pepper seasoning
- 1 medium green chilli chopped
- 1 clove garlic chopped
Beat eggs, freshly chopped tarragon, parsley & seasoning in a bowl.
Heat broccoli florets, green chilli & garlic in frying pan until softened
Crumble goat’s cheese and mix then add egg mix and heat until base browned
Flip frittata and cook on reverse side for further 5 to 6 minutes, until cooked through.
Divide and serve with fresh salad.
