It needs to be sown indoors in February and kept in a warm sheltered spot to ensure a good crop.
Best results in Lancashire are from growing under cover as it needs temperatures of at least 25º Centigrade
Fill pot with compost & sow seeds thinly on top.
Cover with thin layer of compost.
Cover pot with cling film & place in warm spot until seeds germinate.
Keep compost moist & pot seedlings into 7 inch pots.
Feed weekly with liquid feed.
Pot into bigger pots as plant grows.
Cut main stem once it is 1 foot tall (this encourages fruiting).
Tie stem to a cane & feed weekly with liquid tomato feed.
Flowers develop into fruit – gently tap flowers & encourage bees to pollinate flowers.
Harvest when fruit is shiny.
Whole aubergine can be pricked and baked for 30-40 minutes at Gas 6 / 200ºc.
Bangan ka Bhurta
Place aubergine in a roasting tray and grill for 5 minutes, turning to ensure skin is scorched. Place in microwave dish and cook on high for further 5 minutes until soft. Remove most of skin and thickly slice.
Sautee onions in frying pan until soft then add aubergine and tomatoes. Season with cayenne pepper, salt and black pepper. Continue to stir until soft. Serve with fresh coriander.
